Puerto Rican Chicken and Rice - aka Arroz con Pollo

No, I'm not Puerto Rican, but I tended bar in an area where probably 50% or more of my customers were.  While my rudimentary Spanish I learned back in High School helped me serve "cervesas" (always Budweiser, I would ask big or little because we had both size bottles, but I wonder what they are drinking now!!)   After a few years I had made quite a few friends, and they taught me to cook some of their favorites (after bringing me dinners prepared by their wives they would take me to their homes so I could learn and their wives would realize they were more than welcome to come into the bar with their husbands)   Arroz con Pollo and Bacalao were my favorites.  I realized that I haven't ever cooked either for my family.  Not sure if I will cook bacalao - my body does not need more salty fried food, but Arroz con Pollo - for sure !!   Anyway - my recipe can be found here  Arroz Con Pollo - Plan to Eat And I'll be doing more and more re...

Facebook Sabbatical

Have you ever looked at the clock and wondered where the entire afternoon went?  I did on June 5th of this year, and realized that social media just sucks the life out of my day.  Facebook was the biggest issue - instead of just using it to stay on top of what my friends and family were doing, finding new recipes, and reading the news, I found myself arguing about things I didn't even care about !  So... Good-Bye FB for now at least  It's been two weeks and I really don't miss it.  I can text my friends, I can search up new recipes.  Maybe Instagram and Twitter will be next !

Birthday Blues

Another year around the sun.  Funny thing is, I wrote this post a couple days ago.  I was feeling really, really down.  Today I'm feeling better, but re-reading how sad I was on my birthday made me start feeling sad again, so I erased the entire post and put a photo of a sunset.

My Gardyn

I love to garden.   Nothing better than working the soil, breaking up lumps, removing rocks that could impede root growth, and providing food for the dinner table.  The only problem is that I live in an area where the growing season is at most 5-6 months, and that's a lot of cold weather crops.  Really warm growing season is maybe 2 months.   I can't grow in my garden year-round.   But I have grown hydroponically for many, many years. When I saw this on Facebook over and over, I started watching customer feedback.  Then I started backchecking the profiles of the people leaving the feedback - deleting the obvious bots, and wow - nearly 100% positive feedback!!  Let's give it a shot!!  I planted these "pods" January 16th.  Today is March 2nd.  (There was only 28 days in February this year) This device is easily going to be able to provide enough salad fixings for my family year-round.  My electric bill has not sky...

75 Days Hard

Image
Just got back from a whirlwind trip to Florida - still trying to find "the" area where I would like to spend my remaining days.  Started at DeLand, FL where Adam was rowing and worked my way South to West Palm Beach - didn't really find anything that made me go YES - so the search continues !! While I was in West Palm Beach I was able to meet up with my old trainer - Coach Strauss, and we got a couple workouts in.   He challenged me to do 75 Days Hard.  I knew a little about it - not a lot - so of course I said yes !!  Made a spreadsheet - you can find it here - 75 Day Hard Google Sheet If you download it - please save it to your own computer before making changes so that the original stays intact.  Complete all blue boxes - pounds or kg - if you choose pounds here in the USA - the KG will go red so you only do one.   For Protein range - I follow Macros, Inc - I've had a coach for a few years - it helps.  But you can run your Macros fo...
